Garlic Steak And Potato Skewers
Servings: 6-8

 

INGREDIENTS
500 grams sirloin steak, cut into 1-inch cubes
2 cloves of garlic, crushed
2 teaspoons of salt
2 teaspoons of pepper
300 grams new potatoes, cooked and halved
1 red onion, chopped

PREPARATION
1. In a bowl, season the steak with garlic, salt, and pepper, and stir thoroughly.
2. On soaked bamboo sticks, skewer on the seasoned steak cubes, then potatos and onions.
3. Repeat until the skewer is full.
4. On a coal BBQ, cook the steak skewers for 2-3 minutes a side for medium-rare and 4-5 minutes for well done.

Halloumi And Vegetables Skewers
Servings: 6-8

INGREDIENTS
100 milliliters olive oil
50 milliliters sweet chilli
1 teaspoon of salt
1 teaspoon of pepper
250 grams halloumi, cut into 1-inch cubes
1 courgette, cut into 1-inch pieces
200 grams cherry tomatoes

PREPARATION
1. In a small bowl, mix together the olive oil, sweet chilli, salt, and pepper.
2. On soaked bamboo sticks, skewer on the halloumi cubes, then courgette chunks and cherry tomatoes.
3. Repeat until the skewer is full.
4. Brush the sweet chilli oil mix onto to skwer.
5. On a coal BBQ, cook the steak skewers for 2-3 minutes a side, until the cheese and vegetables are soft and turn golden brown.

Prawn And Asparagus Skewers
Servings: 6-8

INGREDIENTS
50 milliliters melted butter
½ lemon, juiced
2 cloves of garlic, crushed
1 teaspoon of mixed herbs
1 teaspoon of salt
1 teaspoon of pepper
200 grams raw prawns
150 grams asparagus

PREPARATION
1. Add the lemon juice, garlic, herbs, salt, and pepper into the melted butter and mix well.
2. On soaked bamboo sticks, skewer on the prawns and asparagus.
3. Repeat until the skewer is full.
4. Brush the butter mix onto to skewer.
5. On a coal BBQ, cook the steak skewers for 1-2 minutes a side, until the prawns turn pink and are cooked through.

Teriyaki Chicken and Mushroom Skewers
Servings: 6-8

INGREDIENTS
400 grams boneless skinless chicken thighs, cut into 1-inch pieces
100 milliliters soy sauce
100 milliliters honey
2 tablespoons of sesame seeds
100 grams spring onion, chopped
Mushrooms, halved

PREPARATION
1. In a large bowl, place the chicken soy sauce, honey, sesame seeds, and spring onion. Stir well, refrigerate and marinade for at least 2 hours.
2. On soaked bamboo sticks, skewer on the chicken and mushrooms. Repeat until the skewer is full.
3. On a coal BBQ, cook the steak skewers for 3-4 minutes a side until the chicken is cooked through and the skewers are golden brown.
