Crispy Salt and Vinegar Smashed Potatoes


These look fantastic! The first thing I thought about, were crisps I must admit, which is why it must be such a great side for a main dish, mmmm! I remember whenever mum brought home a rotisserie chicken for my sister and me, placed a kitchen roll on the table with a couple of plates and we tucked in. I know it sounds weird, but it was definitely much better and tastier than frozen pizzas (although i don’t mind those once in a while myself :P Or pita pizzas!), they would have done nicely with a few of those potatoes on the side though :D Yum!


2 pounds mixed baby potatoes (Yukon Gold, red, etc.)
1 Tablespoon kosher salt, plus addt’l for sprinkling
2 Tablespoons unsalted butter, melted
2 Tablespoons olive oil
2 Tablespoons white vinegar
2 Tablespoons chopped fresh chives
Freshly ground black pepper
